Rhubarb-Martini

Terry & George’s Rhubarb Martini

There are few more distinctively Yorkshire tastes than delicious Yorkshire Rhubarb, and this cocktail from Terry & George’s ‘Feeding Friends’ delivers it in abundance.

INGREDIENTS

600g Yorkshire rhubarb, washed and cut into 2cm pieces
50ml grenadine
200g caster sugar
300ml water
650ml Priory Vodka

To serve
½ egg white (per person)
Ice


METHOD

  1. Place all the ingredients in a large airtight two-litre container and leave to infuse for at least four days. Shake it every day.

  2. After four days, strain the liquid through a sieve (or through a fine cloth if you want a clearer liquid).

  3. Decant into a glass bottle and store in the fridge until needed.

  4. Shake 100ml of the flavoured vodka with half an egg white (per person) over ice and pour into chilled martini glasses.
